A must try! this wonderful Histamine friendly pudding from our Guru of Nutritional Health Virginia Ziulu is simple to make and tastes delicious.
You will need:
- 2tbsp Chia Seeds
- 2tbsp coconut yogurt
- 2tsp homespun chicory root
- 1tsp carob powder
- 1/2 cup unsweetened coconut milk
- 1 tsp vanilla powder or extract
- Sprinkle of toasted pistachios or ground brazil nuts
Method
Place the coconut milk, chia seeds, chicory, carob powder and vanilla powder in a glass jar and thoroughly mix with a fork, until there are no lumps.
Place in the fridge for two hours to set.
When set, add the coconut yogurt as a second layer and sprinkle with pistachios, or crushed brazil nuts. You can also drizzle a little extra chicory root on top for that extra bit of sweetness!
