Our cacao products are produced using single-source, fairly-traded, organic certified cacao beans from Dominican Republic. The beans have notes of peanuts and honey.
Cacao is a fab coffee alternative thanks to the alkaloid, Theobromine, which is a natural stimulant similar to caffeine. Theobromine affects the cardiovascular system, whereas caffeine affects the nervous system, hence why many people get the jitters from drinking coffee.
Untempered means a white 'bloom' pattern will be on the cacao.
Tempering cacao means raising and lower the temperature so that the crystal formulation inside the chocolate is altered. We don't do this for the 100% cacao block, as it doesn't need it. When it's untempered it melts quicker - so it's perfect for hot cacao and baking.
